Chicken Gnocchi Soup

In honor or re-creating Olive Garden recipes I thought I would add this one as well. Very tasty

2 Tbsp. butter
1/2 small onion, finely chopped
1 - 2 cloves garlic, minced
1 Carrot, grated
1/2 stalk celery, finely chopped
8 oz. spinach
1 chicken breast, cooked and shredded (optional)
1 can white beans, rinsed and drained
8 oz. gnocchi
1 can cream of chicken soup
3 c. chicken broth
1c. milk
1/4 c. parmesan cheese
Salt & pepper

Saute onion, garlic, and celery in butter until onion is tender. Add carrot and saute 1 minute. Add remaining ingredients and simmer until spinach is wilted and gnocchi is cooked through. Season with salt and pepper to taste.
