Black Beans and Sausage

Black Beans and Sausage

½ lb. Breakfast Sausage
½ green pepper, chopped
½ onion, chopped
¼ tsp. Garlic powder
1 Tbsp. Flour
1 can tomatoes, slightly drained
1 can black beans (do not drain)
1 bay leaf
3 c. potatoes, cubed and roasted
Saute sausage until no longer pink. Add pepper, onion, and garlic until onion is translucent. Add flour. Cook until thick. Add tomatoes, beans, bay leaf, and salt and pepper to taste. Cook until thick. Remove bay leaf. Serve over potatoes.
