Hoppin' Johns

Hoppin' Johns

2 cans black eyed peas, drained
1 can ham, drained and crumbled
1 small onion, chopped
1 stalk celery, chopped
1 carrot, grated
2 – 3 Tbsp. Fresh parsley, minced
1 bay leaf
¼ tsp. granulated garlic
1 – 2 tsp. Cajun seasoning (more or less to taste)
1 ½ c. cooked rice
1 can cream of chicken soup
1 c. chicken broth

Saute onion, celery, and carrot in oil until onion is tender. Add beans and ham. Saute for 1 minute, add remaining ingredients. Simmer 10 minutes. Remove bay leaf and serve.
