Pork and Black beans

Pork and Black beans

2 - 3 c. wild rice
2 cans black beans, rinsed and drained
1/2 lb pork roast
1 c. packed fresh cilantro leaves
4 green onions
1 Tbsp. lime juice
1 Tbsp. olive oil
2 cloves garlic
1 tsp. honey
1/4 tsp. salt
1/4 tsp. red pepper flakes

Bake pork roast in oven bag or crock pot until cooked through and tender enough to shred with fork. Shred. Cook rice, toss with shredded pork and black beans. Puree remaining ingredients until smooth. drizzle over rice mix and toss to coat
