Curry in a Hurry

1 Tbsp. olive oil
1 tsp. curry powder
1/2 medium onion, chopped
1 jalapeno pepper, seeded and finely chopped
3 c. cauliflower florets
1/4 c. chicken broth
2 c. peas
1 can black or white beans, rinsed and drained

Cook curry, onion and pepper in oil over medium heat until onion is translucent. Add remaining ingredients and simmer until vegetables are cooked. Serve over rice
