Garbanzo Bean Curry

1 can garbanzo beans
1 medium onion, chopped
2 cloves garlic, minced
½ tsp. cumin
1 tsp. curry powder
1 can tomatoes, drained


Saute onion and garlic in oil until translucent. Add cumin and curry. Add remaining ingredients and simmer. Add coconut milk if you like a thicker curry sauce. Serve over rice
